A Toast to Homegrown Excellence: Aulis x Wiston Sparkling Rosé

We sat down with Charles Carron Brown, of the exceptional Aulis London – the Michelin-starred chef’s table and development kitchen in Soho that forms part of Simon Rogan’s prestigious group of restaurants.

In this exclusive tasting session, we got to sample their brand-new English sparkling rosé, made in collaboration with the iconic Wiston Estate, nestled in the South Downs of Sussex.

Charles introduced the wine with his signature passion and precision. “This has been made in conjunction with the Simon Rogan Group and the Wiston Winery,” he explained. 

The style is intentionally not bone-dry, offering a hint of residual giving a full, textured profile. 

We then delved into Aulis’ bold philosophy around English wine. Following their Michelin star win in February 2024, the team made the daring move to remove all champagne from their wine list. “It was a decision that we took to actually say we’re going to support all things local from” Charles shared. “We want to support these vineyards in the same way we do all the other farms and fisheries.”

The wine itself was nothing short of a gastronomic delight. As we sipped, the conversation shifted to its character. “There’s a really savoury, almost meaty character to it,” Harry observed. The sparkling rosé carries aromas of sorbet, cranberry, raspberry, and subtle notes of pomegranate. The palate follows through with that richness and tension, making it beautifully food-friendly.

It’s always a pleasure to discover and celebrate the best of what England has to offer – and when paired with someone like Charles at the helm, the results are truly world-class.
