Tasting Notes

The fruit is whole-cluster pressed and fermented with ambient yeasts before spending more than a year on its lees in used barrels, followed by further ageing in steel. The result is taut and finely drawn, with green apple, citrus and chalky mineral detail carried by fresh acidity and a long, saline finish.
