About the producer

Stepping out from his family’s shadow in 2005, Pierre-Yves Colin teamed up with his wife Caroline Morey to forge one of Burgundy’s most formidable, cult-status power couples. Through meticulous, low-intervention cellar techniques and extended barrel ageing, they craft utterly electric whites that shimmer with intense mineral precision, dazzling energy, and a sleek, wax-sealed brilliance.

France

France remains the benchmark for many of the world’s classic wine styles, built on a deep history of regional identity and an appellation system designed to protect it. AOC rules outline where grapes can be grown and how wines are made, giving structure to places such as Bordeaux, Burgundy, Champagne and the Rhône. Key grapes like Chardonnay, Pinot Noir, Cabernet Sauvignon and Syrah all find their most famous expressions here, alongside countless regional varieties. From the mineral-driven whites of the Loire to the rich blends of the south, French wine is ultimately about clarity of origin and a commitment to balance.

Burgundy

Burgundy is France’s most detailed and site-driven region. Stretching from the cool slopes of Chablis in the north down through the Côte d’Or to the Mâconnais in the south. Pinot Noir and Chardonnay are the foundations here, but the real story is how each village and vineyard expresses them differently. The Côte de Nuits and Côte de Beaune form the region’s core, while areas like the Côte Chalonnaise and Mâconnais add a broader mix of styles and accessibility. Burgundy is defined by careful vineyard work, long-established classifications and a focus on clarity of place rather than heavy winemaking influence.

Burgundy, Distilled

Crystalline citrus, orchard fruit and a subtle mineral edge define this beautifully judged Chardonnay. There’s an immediacy to the freshness, but also a quiet depth beneath the surface that reveals itself with every sip.

Pure Chardonnay Energy - Crafted by one of Burgundy’s most celebrated producers, this Bourgogne Blanc showcases Chardonnay in a lean, vibrant and wonderfully precise style. Bright acidity and a finely tuned structure create a wine that feels both refreshing and quietly profound.

Sunlight Rituals

This high-energy pour is the perfect match for lazy afternoons and a table full of seasonal shared plates. its crisp, mineral-forward drive pairs naturally with raw oysters, light pasta, or fresh goat's cheese. It is an elevated white that is best enjoyed with good company.

Precision Decanting

This elegant format invites you to experience the genius of PYCM exactly as the winemaker intended. Resting safely in a pristine, climate-controlled environment, its structure and layered complexity are flawlessly preserved. You enjoy a silken, flawless glass of fine wine at the absolute peak of its expressive powers.
